Pioneer Butchery & Charcurterie

“Last year we started using some cured and smoked meat products for on-course outlet snacks like ginger beef jerky and pepperoni sticks from the great group of guys at Pioneer. The overwhelming satisfaction we’ve received from members last season is why we are excited to introduce more of their products this year and support the philosophy that they illustrate.”

Pioneer Butchery and Charcuterie was built around tradition. Sausage, smokies and charcuterie products are made with locally sourced, naturally raised meats.

They have combined time tested methods with new ideas and flavours to create a distinct and exciting line of products. All of their products are gluten free. Pioneer Butchery was founded in 2019 by Greg Dixon, Taylor Gant and Allan Dixon. While the latest iteration of Pioneer may still be in its infancy, the Pioneer “brand” has been around for several generations.

In 1959, Dr. Allan Dixon, Greg and Allan’s late grandfather, bought the Bar 11 Ranch on Alberta’s Cowboy Trail. Dr. Dixon was an avid outdoorsman, entrepreneur, and cattle enthusiast. Under the banner of “Pioneer Simmentals”, Dr. Dixon brought the first Simmental bull into Canada from Europe. From then on, ranching and rural living have been deeply ingrained in Dr. Dixon’s lineage.

Most Albertan’s feel a deep pride in their agricultural heritage and its renown on the world stage. Despite this appreciation, for the average consumer it is still difficult to source local, natural, and sustainably raised meats. A founding principal of Pioneer was to help bridge this gap and provide Albertan consumers with easy access to the quality and ethically raised meats in their own backyard.

In addition to supporting local ranchers, Pioneer aims to provide Albertans with innovative and healthy products of the highest quality. All recipes and procedures have been meticulously crafted to create a unique product line and ensure the quality of the finished goods does justice to the meats they are created with.

HydraGreens


HydraGreens is located just two kilometers away from The Glencoe Golf & Country Club on the other side of the Elbow River.

We are so excited to introduce this amazing company and highlight their produce. The Club is using their lettuces exclusively this year and members will surely notice the amazing taste and freshness right away.

Their lettuces, microgreens and herbs are all grown sustainably. This new addition is one way The Glencoe Golf & Country Club is reducing our carbon footprint. HydraGreens is taking sustainable farming to the next level by using a unique and very innovative way of growing. HydraGreens' produce is grown locally in a CubicFarm with the focus of reducing the amount of water, land and energy used to grow each individual plant. No pesticides are used and they take great lengths to guarantee their growing environments stay clean and contaminant free.

This process makes leafy greens not only tastier, but also fresher and cleaner than any other greens on the market. Most of the produce is harvested, shipped and on the store shelf the same day! Their produce is available year-round with consistent colour, size and taste.

Galimax Trading

Galimax Trading sources fresh, local and organic products cultivated and processed in Alberta and eastern British Colombia.

Galimax Trading was incorporated in 2001 by Rudy and Faye Knitel and their Italian partner Karis Davoglio. During the early years Galimax brought high-end European food into Alberta which they marketed into restaurants in Calgary.


After building a customer base and relationships in the cities of Calgary, Edmonton, Canmore, Banff, and Lake Louise, Galimax took the local marketing aspect to an entirely new level and focused on "Bringing the Best from the Best to the Best". This meant sourcing fresh, local and organic products from Alberta and British Columbia.

In 2011 Corne Mans joined Rudy Knitel as a business partner. This relationship flourished which led to Galimax Trading seeking new opportunities and expanding their business model.

Owners, Corne Mans and Rudy Knitel, are incredible and passionate individuals, their ability to curate relationships with local farmers is exemplified through their vast variety of products they offer.  These products are grown by local producers to ensure quality local and organic goods are delivered directly to restaurants and stores.

Waterford Farms


Waterford Farms' values speak for themselves. “Eat fresh, eat well and do not harm.”

Their partnership with North Sea, along with TEJA food group, brought the idea of introducing the beautiful and bountiful selection of mushrooms that will be featured on this year's menu.

Their mushrooms not only taste great in all kinds of dishes, but they are also packed with health benefits and medicinal properties. Filled with vitamins, nutrients and minerals, exotic culinary mushrooms can transform a dish from ordinary to extraordinary.

Waterford Farms have been growing five varieties of fresh, semi-exotic mushrooms in Calgary since January 2021. Their mushrooms are grown indoors on wood pulp and the process is 100% chemical free.
